Grilled Fruit & Angel Food Cake Kabobs: Easy Summer Dessert

One of my favourite things about summer entertaining is that dessert can be just as easy as dinner. After the burgers come off the grill, I like to keep things simple with these Grilled Fruit & Cake Kabobs. Sweet strawberries, cubes of angel food cake and a sweet glaze come together in just minutes for a dessert that’s fresh, colourful and easily customizable!

Whether you’re hosting family, entertaining friends, looking for an easy summer dessert idea, or just a fun way to enjoy summer fruit, these grilled dessert kabobs are always a hit.

Just a few ingredients

  • angel food cake – store bought works fine

How To Make This Easy Summer Dessert

  1. Preheat grill to medium heat.
  2. If using wooden skewers, soak them in water for at least 20 minutes.
  3. Cut the angel food cake into large bite-size cubes.
  4. Thread onto soaked skewers alternating whole strawberries and cubes of cake.
  5. Prepare glaze and brush generously over each kabob.
  6. Spray preheated grill with non stick spray and grill kabobs until cake is golden

Serve while still warm.

My Tips for Best Results

  • start with a clean grill to help the glaze from sticking
  • use larger cake cubes so they don’t crumble and fall apart when turning
  • grill with lid open and watch carefully as they can go from almost done to burnt very quickly
  • turn with tongs
  • brush with a bit of glaze immediately after turning for a little extra sweetness

Variation Ideas

What helps make this an easy summer dessert is that they are so easily customizable. You will want to stick with larger fruits and avoid small blueberries or raspberries, but here are a few of my favourite substitutions:

  • fresh pineapple chunks
  • mango
  • fresh peaches
  • pound cake – cut in 2 inch cubes
  • banana bread – cut into 2 inch cubes

What to Serve with Fruit & Cake Kabobs

These grilled dessert kabobs are delicious on their own, but they’re even better served with:

  • vanilla greek yogurt
  • whipped cream
  • vanilla ice cream
  • a drizzle of chocolate sauce
  • a sprinkle of toasted coconut

Storage

These are best served immediately after grilling. However if you have any leftovers, remove fruit from skewers and store in an airtight container in the refrigerator for up to one day. The cake will soften, but will still be delicious!

Equipment

  • 4 bamboo or metal skewers
  • 1 small microwave safe mixing bowl
  • 1 pastry brush

Ingredients
  

  • 1 prepared angel food cake
  • 24 medium to large sized fresh strawberries hulled
  • 4 tablespoons honey
  • ½ teaspoon cinnamon
  • 2 tablespoons water
  • non-stick cooking spray or olive oil

Instructions

  • Preheat grill to medium. If using bamboo skewers, soak in water for 20 minutes.
  • Cut angel food cake into medium to large cubes.
  • Alternately thread strawberries and cake cubes onto skewer (2 strawberries/2 cake cubes per skewer)
  • In a glass bowl whisk together the honey, cinnamon and water. Microwave on high for 30 seconds, remove from microwave and stir before brushing onto the Kabobs
  • Spray grill with non-stick spray and place Kabobs onto the preheated BBQ, grilling 1 to 2 minutes per side until cake is golden brown and strawberries are slightly soft. Watch carefully!!
  • Remove from grill and enjoy with whipped cream or yogurt for dipping.

    1. Happy spring, Maureen!
      Glad spring has finally come to Canada. That means my relatives up there will be happy that they can get outside and grill, garden and just be out of doors!!! My son and DIL are in South Dakota and spring has barely begun there, too. Crazy long winter this year!
