Blueberry Shortcake

Strawberry season is coming close to ending in our neck of the woods, but fresh blueberries are starting to show up at the Farmer’s Market!  Hello Blueberry Shortcake!

National blueberry picking day deserves a yummy Blueberry Shortcake

I can hardly believe I went the entire strawberry season without having homemade strawberry shortcake.  

When fellow Taste of Home volunteer food editor Jolene from Jolene’s Recipe Journal suggested we review and share a recipe that includes blueberries I knew what recipe I would be looking to review.

She mentioned that July 10th is national blueberry picking day!  Who knew?!  What better way to celebrate than with a freshly baked sweet biscuit piled high with fresh whipped cream and a big blast of sweet blueberry sauce.

Blueberry Shortcake makes the perfect summer dessert

I love all things blueberry.  These Blueberry Oat Bran muffins are a staple around here.  And who doesn’t love some blueberry cheesecake?!  These Blueberry Cheesecake bars make cheesecake easy to grab and go!

I have thoroughly enjoyed spending more time in the kitchen since we did our renovation for the one room challenge.  I can’t tell you how happy I am that we choose the Diva faucet from Blanco.  This faucet combined with the floating rack in the Ikon farmhouse sink makes rinsing fruits and veggies an absolute breeze!

What I really liked about this blueberry shortcake recipe is that the delicious sauce is made by combining fresh blueberries with a simple homemade sweetened blueberry sauce.  It was the perfect compliment to the delicious biscuit and fresh whipped cream.

A tiny sprinkling of confectioners sugar makes it all look really pretty, without making it too sweet.

I made the biscuit using the 2 1/2″ round biscuit cutter, but next time I plan to use a larger one as I found this a tad on the small size.  But, that was okay.  I just had two!

Another delicious Taste of Home recipe!  This blueberry shortcake was gone in the blink of an eye.  We even enjoyed the extra blueberry sauce over vanilla ice cream when the biscuits were all gone!

    What a perfect alternative to strawberry shortcake – I love blueberries even more than I love strawberries, so will definitely be trying this recipe this summer!
