Puff pastry is one of my favorite things to work with in the kitchen. Made from scratch puff pastry is easy to make from scratch, but time consuming. I often will use a frozen puff pastry from the grocery store in a pinch. In Canada I have great results with Presidence Choice brand from Loblaws.
This raspberry puff pastry is ready in about a half hour but again is one of those desserts that look like a lot more effort is required!
Thaw frozen pastry dough for approximately 2 hours. Roll out slightly to measure 12″ in length. Using a ruler, cut pastry into 4″ squares. Cut all the way around the square 1/2″ from the edges. Fold the top left corner down to the bottom right, as shown. Fold the bottom right up and over to the top left, also as shown. Spread mascarpone cheese into the centre and top with 4 our five fresh berries of your choosing.
Place the pastries on a parchment lined baking sheet and bake at 425 degrees for 20 minutes until puffed and golden brown. Lower heat to 300 degrees and continue to bake for approximately 5 minutes. Remove from oven and allow to cool.
See, looks like you were in the kitchen all day!
A little sprinkle with some sugar prior to cooking adds a sweet touch too!
