I may have mentioned it before, but I have a love for all things lemon! These creamy lemon squares are no exception. The lemon flavor is out of this world. They are tangy and creamy and make a nice after dinner dessert. Although it is optional, I have dusted mine with icing sugar as a bit of a sweet touch! This recipe is adapted from Anna Olson’s Back to Baking
To begin, set oven for 350 degrees. Prepare an 8″ square baking pan by greasing and then lining with parchment paper that comes up over the sides. Again, this makes for easy lifting and cutting of the squres.
In the bowl of a food processor pulse together 1 cup of all purpose flour and 1/4 cup of sugar. Add 1/2 cup of cubed cold butter and continue to pulse until mixture takes on a crumbly texture. Do not allow the mixture to come together as a dough, you want it crumbly.
Turn mixture out into prepared pan and press down until firmly packed. Bake in 350 degree oven for 18 minutes. Remove to wire rack to cool.
Again, in the bowl of the food processor pulse 4 ounces room temperature cream cheese with 1/2 cup of sugar until smooth. Add another 1 cup of sugar, 1/4 cup of flour, 2 tsp lemon zest, and 1/2 tsp of baking soda and blend until well mixed. Finally, add 1/2 cup fresh lemon juice and 4 whole eggs. Continue to blend until smooth, scraping down sides of food processor as necesssary.
Pour mixture into cooled prepared crust and bake at 350 degrees for 35 to 40 minutes.
The squares are done when edges are set and are just beginning to rise a bit higher than the centre. The centre of the squares will still be a bit jiggly.
Remove from oven and allow to cool on wire rack. After they have cooled, put them in the fridge for 2 to 3 hours to allow to chill well. This will make for easier slicing.
Remove from fridge. Lift squares out of the pan by lifting up the parchment paper. Slowly peel parchment away from the squares. Slice into squares to desired size. I sliced mine into 16 larger squares to use this as a dessert, however you can easily cut into 25 or even 36 squares if you are adding them to a dessert tray or if you just serving with coffee or tea!
Dust with icing sugar, if desired.
