Easy Grilled Pizza on a Gas Grill

For years I struggled to make pizza on the grill without ending up with a burnt crust or sticky mess. Once I learned this two-zone grilling method everything changed. Now, grilled pizza is one of our favourite ways to use the grill!

Years ago I watched chef, and the author of Pizza On The Grill cookbook, Bob Blumer demonstrate his method for making pizza on a gas grill. It completely changed the way I approached grilled pizza, and after making it this way for years now, I’ve found it’s one of the easiest and most reliable methods. One of the best tips I learned was that good-quality store-bought pizza dough works just as beautifully, as homemade, making grilled pizza an easy weeknight dinner.

Just a few ingredients

  • Pizza dough – 1 1/2 pounds at room temperature
  • Olive oil – for the grill and the dough
  • Corn Meal – to help keep dough from sticking
  • Shredded Cheese – such as pizza mozzarella
  • Sauce – store bought pizza sauce or homemade is fine
  • Toppings – meat, veggies, etc.

Preparation Highlights

  • bring pizza dough to room temperature before beginning
  • Prep toppings (dice, cook bacon if using, etc.)
  • Preheat grill on medium heat to 450 degrees with lid closed
  • start with a clean grill
  • brush grill with oil using a heat safe brush just before adding dough
  • have a long handled barbecue spatula ready

How to Grill Pizza on a Gas Grill

  • Preheat grill by turning on all burners to medium/high until it reaches 450 degrees Fahrenheit
  • Brush the dough balls liberally with olive oil and sprinkle with cornmeal
  • Brush grill with oil and place your dough directly over heat. 
  • Place the dough over heat, close the lid and leave it for about 3 to 4 minutes, maintaining the heat at 400 degrees.  You will notice the underside of the dough is nice and crisp, while the top side will have air pockets (or bubbles) and be someone dry
  • Turn dough over and add sauce and toppings
  • turn off burners on one half of the grill and return pizza to grill over indirect heat
  • close the lid and cook for about 8 minutes, until dough is cooked through and cheese is fully melted

I found that less is more when it comes to toppings. A lightly topped pizza cooks evenly and is easier to get off the grill without making a mess.

If you have a smaller gas grill, cook 2 at a time to ensure there is enough room to finish off over indirect heat (burners off side).

Tips For The Perfect Pizza

  • start with a clean grill
  • don’t stretch dough too thin
  • don’t overload the toppings
  • keep the lid closed while cooking
  • once crust is flipped, work quickly to add toppings
  • check for doneness at about the 6 minute mark
  • be sure to cook until crust is fully cooked through

Pizza Toppings Ideas

We love to fry up some onions, sweet corn, peppers and asparagus and throw it on the pizza with pizza mozzarella and my homemade marinara sauce, but any of these would be a nice addition:

  • Classic – pepperoni, mushroom, mozzarella
  • Veggie – tomato, basal, zucchini
  • Meat Lovers – pepperoni, sausage, chicken
Can this pizza be made on a charcoal grill?

I have never tested it on a charcoal grill as I prefer the temperature control I have with a gas grill.

Do I need a pizza stone?

No, for this recipe the pizza is cooked directly on the grill.

How do I keep the dough from sticking?

Starting with a clean hot grill, oiling the dough and the grill all help to prevent the pizza crust from sticking on the grill.

Can this pizza be made ahead of time?

I personally don’t recommend this be made ahead as it is best fresh off the grill.

Serving Suggestions

Serve your grilled pizza along side any summer side dishes, like this no-bake baked bean salad or a simple fresh garden salad.

Equipment

  • 1 gas grill
  • 1 grill thermometer if grill is not already fitted with one
  • 1 barbecue spatula large and long handled
  • 1 sauce brush heat proof

Ingredients
  

  • 1 ½ pound pizza dough room temperature
  • pizza or marinara sauce
  • shredded cheese
  • toppings of your choice

Instructions

  • Turn all gas grill burners on to medium and preheat to 450℉ with lid closed.
  • Divide dough into 4 equal portions, brush with oil and sprinkle with corn meal, roll into flat disks. Brush pre-heated grill with oil and place each pizza disk onto the grill, close lid and cook for about 3-4 minutes (keeping grill temp at around 400℉ (adjust heat as necessary).
  • Open lid, turn off heat to one half of the grill. Flip pizza dough once bottom is crispy with grill marks and top is bubbly, moving it to the side with heat off. Add sauce, cheese and toppings, close lid and continue to cook for about 8 minutes, checking at about the 6 minute mark, until crust cooked through and cheese is melted.

Notes

Store leftovers wrapped well in the refrigerator.  Reheat on the grill or the oven at 350 degrees until heated through.

    1. Oooooh, every summer I say I’m going to make grilled pizzas and I never do. I’m putting this recipe onto my meal plan right now so I don’t miss out again!

    2. This looks so tempting! The hubby’s been bugging me to try out pizza on the grill since the past few weeks, and I think we may just do it this weekend!

    3. Oh, yum Maureen! We love pizza cooked on the grill! I found out about grilled pizza in a similar way to you! I was watching a morning show (probably while on the eliptical at the gym!) and a grill guy demonstrated how to make pizza in just minutes. I was amazed and tried it immediately. I didn’t have your excellent instructions so that first effort was a bit more browned than desirable. Since then I have made it often and luckily have improved. I make mine a little differently than this and now I am curious to try your method!

      1. I think you won’t be disappointed! Just a tip though, do not be tempted to open the lid more than once after you add the toppings! I found out the hard way it will add at least 5 minutes onto the cooking time!! Patience is not my strong point 🙂
