Tips for Cooking Chicken Breast
DON’T OVER COOK IT – The biggest and easiest secret to juicy chicken breast is simply not over cook it! Chicken breast doesn’t take all that much time to cook, and cooking it beyond the safe cooking temperature can result in dry, tough chicken.
The cooking time will of course vary depending on the size and thickness, and of how you are cooking it, so my best advice is to invest in a digital instant-read meat thermometer to check for doneness.
USE SIMILAR SIZE PIECES – When cooking several pieces of chicken at the same time, whether baking them on their own or as part of a casserole, choose uniform size pieces to ensure even cooking. This goes for chicken that is diced before cooking as well.
It’s a good idea to gently pound chicken breasts with one end much larger than the other, as often can be the case, until they are more uniform in size.
DON’T SKIP THE SEASONING – When baking chicken breast to include in a sandwich or wrap, be sure to season well with salt and pepper. A dash of paprika also adds a lovely flavour, as I learned from my mom!
LET IT REST – If you’re cooking in a recipe such as the Dijon Chicken breast recipe above, be sure to allow the chicken a few minutes to rest before slicing. This gives the time for the juices to redistribute throughout instead of running all over your cutting board!
INVEST IN A THERMOMETER – As mentioned above, a simple instant-read digital thermometer is your best friend when cooking chicken. It takes all the guess work out of knowing when it’s done and helps prevent over-cooking. This is one of my favourite kitchen tools, and I wouldn’t be without one.
How Do You Know When Chicken Breast is Done
Chicken breast is safely done when the thickest part is cooked to a minimum of 165 degrees Fahrenheit (74 degrees Celsius), and this is where the quick-read meat thermometer comes in handy. I find it is most certainly the most reliable method to check for doneness.
