Tips for Baking With Strawberries
- wash and completely dry fresh strawberries as any moisture left on the berries can make a difference in the final product due to the extra moisture
- for recipes that require strawberries to be chopped, be sure to chop into uniform size pieces
- toss berries in a bit of flour before adding to recipes like muffins, quick breads or any recipe that they need to be folded into batter as this helps prevent them from sinking to the bottom
- expect some of the juices to be released when baking – this just adds to the yummy strawberry flavour!
- avoid using overripe berries in recipes that call for the strawberries to hold their shape well, such as when folding into whipped cream for the Vanilla Strawberry Cake

Fresh vs Frozen Strawberries
Frozen berries release more moisture into your recipe and are best for recipes such as:
- muffins or quick breads where the batter is sturdy enough to support the berries
- recipes that call for a strawberry filling such as strawberry crumble bars
- bundt or coffee cakes with a sturdy batter that require strawberries to be folded in
- recipes that require strawberries to be cooked down on the stove top such as for pies
- when using frozen strawberries it is best not to thaw them first
Fresh strawberries are best used for recipes that require the berry to maintain some of their structure, such as:
- strawberry galettes, tarts, crisps and cobblers
- ice cream recipes where you want juicy chunks of strawberry throughout

Strawberry Baking FAQ’s
Strawberries tend to sink in batters that are too thin or if they release too much moisture as they are baked. Hence, it is important to dry berries thoroughly and toss in a bit of flour before adding to the batter to help prevent them from sinking.
By all means yes. Over ripe berries add extra flavour and sweetness when used in recipes for muffins, quick breads, coffee cakes and bars. Do avoid using them in any recipes that need to hold their shape well.
Use just firm just ripe or slightly under ripe berries that will hold their shape well. Additionally be sure strawberries are dry before using them for baked goods, and toss in a bit of flour before adding to batters. Store baked desserts in the refrigerator once cooled.
Fresh just ripe strawberries should be stored in the refrigerator, unwashed for up to 3 days. I have heard about and tried storing them in mason jars, and can attest to the fact that this does work! I have had berries last longer than a week when stored this way. Always use a clean, very dry mason jar and remove any damaged or over right fruit before storing. Be sure to store the strawberries unwashed.
Since strawberry season is just a few short months here, I always buy extra to freeze and bake with later. The best way I have found is to wash and dry berries thoroughly. Lay them out in a single layer on a baking sheet and place them in the freezer and once frozen transfer to a zipper freezer bag and release all the air. Store in freezer for up to 3 months for best freshness. I often slice fresh strawberries before freezing as well using the same method.
