Vanilla Berry Charlotte

I don’t know about you, but sometimes Sunday dessert outshines Sunday dinner by a long shot!  Yesterday was just one such Sunday.

I was leafing through some old issues of a recipe magazine and I came across a recipe for this Vanilla Berry Charlotte and knew I was going to make it before the weekend was done!

Purely decadent with layers of white cake (although chocolate would be really good too), raspberry jam, a creamy vanilla & Cool Whip filling and topped with even more Cool Whip, fresh raspberries and chocolate curls.

You wouldn’t think it would be easy, would you?

After baking the cake, it took all of 20 minutes to put together.  Chill time is 3 hours, so making it early in the day or even the night before is best.

A red ribbon dresses it up, but I think a long red licorice string would make a nice touch.  A dusting of icing sugar just before serving pretties it up just a bit more.

Since Sunday dinner was Cheddar Cheese and Potato Casserole, which while really yummy, I think you can see why I couldn’t wait until dessert!

    Wow! This dessert is beautiful and looks delicious. I can’t believe it only took 20 minutes to make it!!! I think I’ll make it for Mother’s Day. Thanks for the recipe, Maureen.

    I made this two weeks ago and it was SENSATIONAL!!!! Looks complicate but it’s as easy as pie to make- which I love because I’m no baker!!!! Love your website- it makes me smile every time. 🙂
