Peach Iced Tea Cocktail

A refreshing peach iced tea with a taste of the tropics with a splash of coconut rum. Equally delicious without the addition of rum for a refreshing non-alcoholic summer beverage.

Equipment

  • kettle
  • 4 cup glass measuring cup
  • 1 sauce pan
  • blender
  • 1 pitcher

Ingredients
  

  • 4 cups freshly boiled water
  • 3 tea bags, black, green or white tea
  • 3 ripe peaches, skin on, thinly sliced
  • 1 ripe peach, peeled, sliced frozen
  • ½ cup granulated sugar or super fine sugar
  • 1 ½ cups room temperature water
  • coconut rum optional

Instructions

  • Pour boiled water over tea bags, cover with a plate and steep for 5 minutes. Remove tea bags and set aside to cool.
  • In a medium saucepan, combine unpeeled peaches, sugar and 1 and 1/2 cups of water, bring to a boil over high heat. Lower heat to medium-low and simmer for 30 minutes. Stir and crush peaches about every 5 minutes.Carefully transfer cooked peaches to a blender and blend until smooth.  If necessary, pour through a fine sieve to remove any chunks of peaches left behind. 
  • In a large pitcher combine the peach puree and the tea.  Chill. 
  • To serve add ice and one or two frozen peach slices to a tall glass, fill with chilled peach iced tea mixture.
    To make it a cocktail, add 1 ounce coconut rum and stir gently.

Notes

Store in the refrigerator.
