Ingredients

cup
sugar

teaspoons
baking powder
½
teaspoon
salt

eggs
¾
cup
milk

tablespoon
vegetable or canola oil
¼
teaspoon
almond extract
1
cup
maraschino cherries, halved
½
cup
walnuts
optional
¼
cup cherry juice
drained from cherries
1
cup
confectioners sugar
Instructions
Preheat oven to 350℉ and spray loaf pan with non-stick spray
In a large mixing bowl sift together flour, sugar, baking powder and salt.
In another bowl whisk together eggs, milk, oil, and almond extract (if using)
Add wet ingredients to dry ingredients. Stirring until smooth. Add chopped cherries and walnuts and fold in just until combined.
Pour into prepared 9 by 5 inch loaf pan and bake for 60 to 70 minutes, until cakes tester comes out clean.
Remove from oven and allow to cool before drizzling with glaze.
Notes
Store in an airtight container for up to 3 days at room temperature or wrap well and freeze for up to one month.
