Ingredients

  • 2 sheets frozen puff pastry thawed
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 1 cup dried cranberries
  • 1 cup chopped fresh baby spinach leaves
  • 16 ounce wheel of brie chopped
  • 1/2 cup chopped walnuts
  • 1 large egg beaten with a tablespoon of water

Instructions

  • Preheat oven to 400 degrees. Line baking sheet with parchment paper.
  • Unroll pastry sheets, leaving them on the parchment paper they come rolled in.
  • Whisk together dijon mustard and honey, and brush half of the mixture onto each sheet of pastry dough.
  • Sprinkle each pastry dough with half the chopped spinach and half the chopped brie and half the dried cranberries. Sprinkle 1/4 cup chopped walnuts over each.
  • Using the parchment paper as a guide, roll up each sheet of pastry dough jelly-roll style along the long edge. Using a sharp knife, carefully slice each pastry log into 12 equal slices and place on prepared baking sheet, leaving room between each as they will puff up and expand. Brush each slice with egg whisked with 1 tablespoon of water.
  • Bake at 400 degrees for 15-20 minutes, until puffed up and golden. Remove from the oven and allow to cool slightly before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in 350 degree oven for about 5 minutes.
