fresh fruit slices (kiwi, strawberries, mandarin oranges, etc)
¼cuporange marmalade or peach jam
Instructions
Crust
Add sifted confectioners sugar, ground almonds, butter, salt and vanilla to bowl of electric mixer. Beat at low speed until smooth and well combined. Add the egg and beat until smooth.
Sift the flour with the cocoa powder and add to dough mixture. Beat until smooth and no streaks of flour remain. Turn onto a piece of plastic wrap, flatten, wrap tightly and chill for approximately 2 hours.
After dough is chilled sufficiently, preheat oven to 350℉.
Roll dough on a lightly floured surface into a circle approximately ⅛ inch thick. Transfer to baking pan, prick with fork and bake at 350℉ for 15 to 20 minutes until edges are starting to appear dry and centre is set. Remove from oven and cool completely.
Topping
In bowl of electric mixer beat cream cheese and vanilla and until fluffy. Spread mixture onto cooled crust, leaving about a ½ inch border. Arrange sliced fruit slices to completely cover cream cheese mixture.
Add ½ tablespoon warm water to orange marmalade blending until smooth. Brush over fruit to add a nice sweet glaze.
Notes
Store any leftovers in the refrigerator for up to 2 days.
