These butter pecan blondies are soft, chewy bars that taste like a sweet, buttery cookie. They start with a cake mix, and brown sugar and melted butter give them a rich, caramel flavour. Chopped pecans give a crunchy texture and butterscotch chips add a smooth sweetness.
Preheat oven to 350 degrees. Line a 9 by 13 cake pan with parchment or spray with non-stick spray, and set aside.
In a large mixing bowl whisk together cake mix and brown sugar. Add melted butter and eggs and mix using a spatula or large wooden spoon until well blended and smooth.
Add chopped pecans and butterscotch and mix well to combine.
Transfer mixture to the prepared baking pan and using an offset spatula spread the batter evenly into the pan.
Bake for 23 to 28 minutes, until edges are golden and toothpick comes out clean. Transfer to cooling rack to cook completely.
Cut into squares and dust with confectioners sugar.
