Strawberry Cream Cheese Mousse

This super simple strawberry cream mousse is made with just 4 ingredients. It's creamy, light and fluffy. The perfect dessert for every day or special occasions.

Equipment

  • 1 stand mixer, paddle and whisk attachments or hand mixer with mixing bowls
  • 1 spatula
  • measuring cups
  • 4 dessert dishes

Ingredients
  

  • 1 8 ounce block of regular cheese cheese
  • ½ cup strawberry jam or strawberry preserves
  • ¾ cup confectioners sugar, sifted
  • 1 cup whipping cream (35% fat), very cold

Instructions

  • In bowl of electric mixer fitted with paddle attachment beat cream cheese and strawberry jam until smooth and well combined, scraping down sides of bowl as necessary. Add confectioners sugar and continue to beat until smooth and creamy.
  • In separate bowl whip cream (with whisk attachment if using stand mixer) until stiff peaks form. Add to cream cheese mixture and gently fold in using a rubber spatula just until blended. Spoon or pipe into dessert dishes and chill for at least 1 hour. Garnish with fresh fruit.

Notes

For variations try using different jam flavours such as raspberry or blueberry.
Add graham or chocolate cookie crumbs to the bottom of dessert dishes before spooning in the mousse.  Garnish with fresh fruit.
Keep any leftovers refrigerated for up to 3 days or freeze in an airtight container for up to 8 weeks (defrost in the refrigerator).
