Greek Yogurt Banana Streusel Muffins

Muffins are a staple at our home, especially during the colder months.  I think it goes way back to when my girls were in school.  I would realize at 8 pm that I didn’t have any snacks for their lunches, so off I would go to the kitchen to whip up a batch of these greek yogurt banana muffins, or these banana split muffins when I had maraschino cherries on hand. 

Not only are they super fast and easy to prepare, they are the perfect on-the-go breakfast or snack!  These banana muffins were a favourite as they have the extra boost of protein from the Greek yogurt.

Some tips for preparing for making this recipe

  1. Mash banana on a piece of parchment paper for easy clean-up
  2. If adding chopped walnuts, toast them for about 5 minutes in the oven before adding to the flour for a richer, nuttier flavour
  3. Add chocolate or butterscotch chips
  4. Dust with powdered sugar when completely cool for a bakery style muffin

Step by step instructions for making banana muffins with Greek yogurt.

Step One: Mash bananas with a fork and combine with melted butter, eggs, greek yogurt and sugar., whisking until well combined.

Step Two: Combine flour, baking powder, baking soda and cinnamon in a large bowl and whisk until well combined. Add wet ingredients and fold in just until combined.

Step three: In a small bowl combine streusel ingredients, and blend with your fingers or a fork until well combined. Fill muffin trays and sprinkle streusel on top of each one. Bake!

Between the bananas and the yogurt in this recipe, these muffins are so moist and delicious.  The banana is the star of the show though, and of course the streusel topping adds a lovely sweet crunch.

Greek Yogurt Banana Streusel Muffins

These bakery style banana muffins are made with Greek yogurt and result in a super moist and delicious treat perfect for breakfast on the go or to pack into lunches.

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 cup Greek yogurt
  • 1 cup mashed banana (2-3 very ripe bananas)
  • 1 teaspoon pure vanilla extract
  • Crumble Topping Ingredients
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 butter, melted
  • 2/3 cup all purpose flour

Instructions

  1. Preheat oven to 425 degrees and line muffin tins with paper liners or spray with non-stick spray if not using liners
  2. In a large mixing bowl combine flour, baking powder, baking soda and cinnamon, set aside
  3. In a medium mixing bowl combine melted butter, sugar, mashed banana, eggs and Greek yogurt and vanilla. Whisk until well blended.
  4. Add wet ingredients to dry ingredients, folding just until flour is incorporated. Do not over mix.
  5. Using an ice cream scoop, fill each muffin tin almost to the top.
  6. Prepare crumble by combining all ingredients in a small bowl. Sprinkle generously on top of each muffin.
  7. Bake for 8 minutes and then turn down the heat to 350 degrees and bake for 10-12 minutes more, until a toothpick or cake tester comes out clean.
  8. Dust with powdered sugar if you like.

Notes

Substitutions: You can substitute sour cream or buttermilk for the Greek yogurt. You can also substitute vegetable oil or light olive oil for the melted butter.

Extras: chopped walnuts, chocolate chips or butterscotch chips to the flour mixture before combining with the wet ingredients.

  2. I too whip up muffins often when I realize there are no lunch snacks in the house! Those look beautiful. Everyone in my house loves banana muffins, so this will be a nice change from my usual recipe. Who doesn’t love a good streusel topping?!
